Recipe from the Kitchen of Television's Favorite Chef, John Pisto

 
Pisto's Rack of Lamb with Mint Sauce
(Serves 4-6)
 
 
  • 2 racks of lamb

  • 1 cup seasoned bread crumbs

  • olive oil

  • one-quarter cup Dijon mustard

  • aluminum foil

  • salt and black pepper to taste

  • one-quarter cup Pisto's Sensational Seasoning

 

Preheat oven to 4500. Preheat cast iron skillet for 10 minutes on highest heat. While the skillet is heating up, cover the exposed bones of the lamb with tin foil. Paint rack with oil, rub in Pisto's Sensational Seasoning, salt and pepper. Place in smoking hot skillet and brown 3 minutes on each side. Remove meat from skillet.

Coat meat with mustard. Sprinkle bread crumbs on mustard. Cook in preheated oven for approximately 15-20 minutes for rare to medium rare meat. Serve with mint sauce.

 
Mint Sauce
  • 1 cup fresh mint
  • one-half cup red wine vinegar
  • 6 garlic cloves
  • 2 tablespoons sugar
  • salt and pepper to taste

Dice mint, chop garlic coarsely. Warm all ingredients in skillet for 2-3 minutes and serve.
