boneless chicken breasts

one-quarter cup vermouth

foil-covered bricks

1
teaspoon butter

olive oil
-
2
teaspoons dry oregano
-
10 garlic
cloves
-
2 lg.
lemons

teaspoon
Pisto's Sensational Seasoning

You
will need an extra-large cast iron skillet. A second pan,
large enough to hold 2 bricks yet small enough to fit inside
the large skillet, will be used as a press (this pan's bottom
must be clean or covered with foil). Cover bottom of first
skillet with oil and whole garlic cloves. Heat over medium
flame for approximately 5 minutes. Season chicken with
Pisto's Sensational Seasoning,
then place in prepared skillet. Cover with second pan and
weigh it down with bricks. Cook approximately 8-10 minutes,
over medium heat on each side or until done. Remove chicken
from skillet and cover on serving plate. Add vermouth, butter,
oregano and juice from lemons to skillet and stir until sauce
is slightly reduced. Pour sauce over chicken and serve. |
